Recipe Card

ingredients

  • 1 7 ounce lamb shank
  • 1 tablespoon lemon zest
  • 1 1/2 teaspoons kosher salt, plus more to taste
  • 1 1/2 teaspoons black pepper, plus more to taste depending on preference
  • 1 teaspoon turmeric powder
  • 4 cardamon pods, cracked, seeds removed, and pods discarded
  • 2 cinnamon sticks
  • 1 teaspoon coriander
  • 2 tablespoons corn oil

Method

  • Step 1

    Marinate lamb with all spices and let it marinate for 24 hours.

  • Step 2

    Prepare a tandoor with fire.

  • Step 3

    Wrap lamb with banana leaves and aluminium foil.

  • Step 4

    Cook in tandoor overnight or depending on size of lamb.

  • Step 5

    Remove from the tandoor and open the foil and remove from banana leaves. Serve with rice.
