ingredients
- 1 7 ounce lamb shank
- 1 tablespoon lemon zest
- 1 1/2 teaspoons kosher salt, plus more to taste
- 1 1/2 teaspoons black pepper, plus more to taste depending on preference
- 1 teaspoon turmeric powder
- 4 cardamon pods, cracked, seeds removed, and pods discarded
- 2 cinnamon sticks
- 1 teaspoon coriander
- 2 tablespoons corn oil
Method
Step 1
Marinate lamb with all spices and let it marinate for 24 hours.
Step 2
Prepare a tandoor with fire.
Step 3
Wrap lamb with banana leaves and aluminium foil.
Step 4
Cook in tandoor overnight or depending on size of lamb.
Step 5
Remove from the tandoor and open the foil and remove from banana leaves. Serve with rice.
