ingredients
- 1 cups Pumpkin Puree
- 1 teaspoon Pumpkin Pie Spice
- 1 teaspoon Vanilla Extract
- 1/2 cup Butter, Softened
- 1 1/8 tabelspoons All-Purpose Flour
- 3/4 cup Old Fashioned Oats
- 1/2 teaspoon Salt
- 1/2 teaspoon Baking Soda
- 1/2 teaspoon Baking Powder
- 3/4 cup Brown Sugar
- 1 Egg
- 3/4 cup Semisweet Chocolate Chips, Melted
- 1 Maldon Flaky Sea Salt
Method
Step 1
Preheat oven to 350.
Step 2
Combine flour, pumpkin spice, baking powder, baking soda, salt, and oatmeal in a medium bowl and mix well.
Step 3
Combine pumpkin, egg, softened butter, vanilla and brown sugar. Mix until light and fluffy with a hand mixer.
Step 4
Mix in dry ingredients until well combined but do not over mix.
Step 5
Drop cookies onto parchment lined baking sheet, about 2 TBS batter each. Bake for 8-11 minutes.
Step 6
Let cookies cool, then prepare chocolate.
Step 7
Melt chocolate in microwave in 30 second intervals, stirring each time until chocolate looks smooth and glossy.
Step 8
Dip cookies into chocolate and sprinkle with flaky sea salt.
Step 9
Let chocolate harden in fridge or at room temperature.
