Roasted Chicken Legs with Herbed Green Sauce
2 chicken legs
3 cups assorted herbs (such as mint, basil, cilantro)
1 tsp honey
3 tbsp white wine vinegar
1/2 cup olive oil
couscous to serve
Preheat oven to 400F degrees. Sprinkle chicken with salt and a little smoked paprika.
Warm 2 tbsp of olive oil in a cast iron skillet over medium heat; sear chicken skin side down until golden brown. Flip chicken over and place the skillet in the preheated oven to bake for 25-30 minutes or until it reaches 165F degrees on a meat thermometer.
Meanwhile, prepare your green sauce by combining the herbs, honey, vinegar and a big pinch of salt and pepper in a blender. With the motor running, drizzle in some olive oil.
Serve the chicken with a drizzle of the herb sauce, cooked couscous or quinoa. Enjoy!
