  • 200 grams (7 ounces) firm tofu
  • 1 tablespoon olive oil
  • 1/8 cup soy sauce
  • 1/4 cup BBQ sauce
  • 1 tablespoon smoked paprika

For the Creamy Pasta:

  • 1 tablespoon olive oil
  • 1 medium yellow onion, diced
  • 2 garlic cloves, crushed
  • 1 teaspoon Dijon mustard
  • 2 teaspoon white miso paste
  • 1 1/2 cups plant-based cream (such as Flora)
  • 2 teaspoons vegetable stock powder
  • 3 tablespoons nutritional yeast
  • 200 grams (7 ounces) pasta spirals
  • Large handful of spinach
  • Hemp seeds (optional), to taste

Method

  • Step 1

    Preheat the oven to 350°F (fan-forced). Line a baking tray with parchment paper.

  • Step 2

    Cut the tofu into small cubes and place in a bowl. Add olive oil, soy sauce, BBQ sauce, and smoked paprika. Toss to coat.

  • Step 3

    Spread tofu on the prepared tray and bake for 20 minutes, until crispy and caramelized.

  • Step 4

    While tofu bakes, bring a pot of water to a boil. Cook pasta according to package directions until al dente, about 8 minutes. Drain and set aside.

  • Step 5

    In a deep frying pan or pot over medium-high heat, add olive oil and diced onion. Cook for 2–3 minutes, then add garlic and cook another 1–2 minutes.

  • Step 6

    Reduce heat to low-medium. Stir in Dijon mustard, miso paste, plant-based cream, stock powder, and nutritional yeast. Mix until fully combined.

  • Step 7

    Add the cooked pasta and spinach to the sauce. Stir until spinach is wilted and everything is well-coated.

  • Step 8

    Remove from heat. Top with BBQ tofu bits and hemp seeds if desired. Serve warm and enjoy!
