This Homemade Sweet Potato Gnocchi is an easy recipe as far as homemade pasta goes. Topped with a buttery parmesan sauce, wow guest with this gnocchi that happens to be gluten-free.

ingredients
- 3 medium sweet potatoes
- 200 g gluten-free flour
- 1 egg, yolk
- black pepper to taste
- butter and parmesan to serve
Method
Step 1
Preheat your oven to 180 degrees, make a few incisions with a knife or fork into the sweet potato and roast until soft in the middle.
Step 2
Cool until not too hot to touch, remove the skins and mash the sweet potato in a bowl until very smooth. Add the egg yolk then add the flour gradually until you can form a smooth dough.
Step 3
Dust a board with more flour and cut the dough into quarters. Roll out the dough into a sausage shape and portion out your gnocchi; dusting with a bit more flour.
Step 4
Gently boil in salted water, after 2-3 minutes they should start to float up to the top. Meanwhile melt butter in a pan add the cooked gnocchi to the butter using a slotted spoon.
Step 5
Add freshly grated parmesan (however much you want) and some gnocchi water and stir gently until a silky sauce is created.
Step 6
Serve with more parmesan and enjoy.
