1-2 eggplants, sliced about 1 inch thick
olive oil, for brushing
1/2 cup tomato sauce
1/2 avocado, sliced
cherry tomatoes, sliced
parmesan, for topping
Preheat oven to 400F.
Brush eggplant slices with olive oil and roast for about 20 - 30 minutes.
Top with tomato sauce, kale, avocado, cherry tomatoes and parmesan.
