ingredients

  • 5 eggs
  • 1 cup sugar
  • 3 drops vanilla extract
  • 1/2 teaspoon baking powder
  • 1 cup unbleached flour
  • 3 fresh peaches, sliced
  • 1/4 cup powdered sugar
  • Pam or butter

Method

  • Step 1

    Preheat oven to 350F.

  • Step 2

    Butter up a 9″ cake pan.

  • Step 3

    Slice 3 peaches, removing the pit. Spread the slices on the bottom of the buttered cake pan.

  • Step 4

    Beat together five large eggs and 1 cup of sugar on full speed until well blended.

  • Step 5

    Add to the eggs 3 drops of vanilla extract and continue beating for another minute.

  • Step 6

    Bring speed to low and add in 1/2 teaspoon of baking powder and 1 cup of unbleached flour. Let it all incorporate together for about a minute-no more.

  • Step 7

    Spread the batter on top of the sliced peaches in the cake pan.

  • Step 8

    Bake for 25-30minutes, or until you can gently stick a toothpick in and it comes out clean.

  • Step 9

    Turn the cake upside down to a plate and take the cake form off.

  • Step 10

    After cake cools down, sift 1/4 cup of powdered sugar on top of the cake.
