ingredients

  • 1 golden beet, cooked and cut into cubes
  • 1 red beet, cooked and cut into cubes
  • 4 ounces goat cheese, crumbled
  • 1/2 cup hazelnuts
  • null, toasted and chopped
  • 1 tablespoon microgreens, chopped

Balsamic Reduction

  • 1 1/2 teaspoon raw honey
  • 4 tablespoons balsamic vinegar

Method

  • Step 1

    Boil beets for 1 1/2 hours. Drain the water and let them cool. Peel cooled beets and cut them into small cube pieces.

  • Step 2

    Add crumbled goat cheese in a medium bowl with beets.

  • Step 3

    On a small skillet over medium heat, toast hazelnuts. Add toasted hazelnuts to beets.

  • Step 4

    Garnish salad with micro greens.

For the Balsamic Reduction:

  • Step 1

    Add balsamic vinegar and honey to a small pot.

  • Step 2

    Bring mixture to a boil, then reduce the heat and simmer for 10-15 minutes or until the sauce coats the back of a spoon.

  • Step 3

    Drizzle on salad.
