ingredients

  • 1 pound Brussels sprouts
  • 1 red apple
  • 1/4 cup walnuts, chopped
  • 1/4 cup pomegranate seeds
  • 1/4 cup parmesan cheese, sliced
  • 2 tablespoon olive oil
  • 2 large cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon lemon zest
  • 1/2 lemon, juiced
  • 1/2 teaspoon Dijon mustard
  • 1 teaspoon honey
  • 1/4 cup olive oil
  • salt, to taste
  • black pepper, to taste

Method

  • Step 1

    Pound chicken breasts a few times to make an even thickness.

  • Step 2

    Mix all ingredients of the marinade in a ziplock bag. Add chicken and coat it evenly with spices. Refrigerate for at least 4 hours.

  • Step 3

    Preheat the grill pan and cook marinated chicken for 3 min on every side.

  • Step 4

    Let the chicken cool down and slice it into ¼-inch pieces.

  • Step 5

    Halve Brussels sprouts vertically and slice thinly. Add into a salad bowl along with chopped walnuts, chicken, pomegranate seeds, and parmesan cheese.

  • Step 6

    Thinly slice apples and add to the salad bowl.

  • Step 7

    Whisk all ingredients for the dressing, and toss with salad.
