ingredients

  • 2 tablespoon olive oil
  • 2 pound beef, boneless
  • 4 carrots, sliced
  • 1 yellow onion, chopped
  • 7 potatoes, depending on their size
  • 3 tablespoon organic tomato paste
  • salt, to taste
  • black pepper, to taste
  • water
  • fresh dill, for garnish

Method

  • Step 1

    Heat up 2 Tablespoons extra virgin olive oil in a cast iron pot (or any pot).

  • Step 2

    Chop 2 pounds of beef, then sauté in oil for 1 minute on medium-high heat. Add a pinch of salt and pepper.

  • Step 3

    Peel and chop 7 potatoes into fours (you don’t want small pieces, that would make it mushy), add to the beef.

  • Step 4

    Chop 1 yellow onion, add to the pot.

  • Step 5

    Peel and slice 4 carrots.

  • Step 6

    Add 3 Tablespoons of tomato paste.

  • Step 7

    Add just enough water to cover all the ingredients.

  • Step 8

    Add salt and pepper to taste.

  • Step 9

    Cover the lid and simmer for 1 hour on the lowest heat. Garnish with chopped fresh dill.
