ingredients
- 3 tabelspoons olive oil,
- 1 small onion, chopped
- 1 clove of garlic, minced
- 2 tabelspoons unbleached flour,
- 3 cups chicken broth,
- 28 ounces whole or peeled tomatoes,
- salt, to tatse
- pepper, to taste
- parmesan cheese, for garnish
- croutons, optional, for garnish
- fresh dill or parsley, optional, for garnish
Method
Step 1
In a medium size soup pot, heat up 3 Tablespoons of olive oil.
Step 2
Add onion and garlic, then sear until slightly golden-brown.
Step 3
Add 2 Tablespoons of flour and stir to coat the onion and garlic.
Step 4
Add in 3 cups of chicken broth and tomatoes.
Step 5
Bring to a boil and add salt and pepper to taste.
Step 6
Let it cool down.
Step 7
Blend the mix together.
Step 8
Put the mix back on the stove and heat it up.
Step 9
Garnish with cheese, croutons, and parsley.
