ingredients

  • 3 tabelspoons olive oil,
  • 1 small onion, chopped
  • 1 clove of garlic, minced
  • 2 tabelspoons unbleached flour,
  • 3 cups chicken broth,
  • 28 ounces whole or peeled tomatoes,
  • salt, to tatse
  • pepper, to taste
  • parmesan cheese, for garnish
  • croutons, optional, for garnish
  • fresh dill or parsley, optional, for garnish

Method

  • Step 1

    In a medium size soup pot, heat up 3 Tablespoons of olive oil.

  • Step 2

    Add onion and garlic, then sear until slightly golden-brown.

  • Step 3

    Add 2 Tablespoons of flour and stir to coat the onion and garlic.

  • Step 4

    Add in 3 cups of chicken broth and tomatoes.

  • Step 5

    Bring to a boil and add salt and pepper to taste.

  • Step 6

    Let it cool down.

  • Step 7

    Blend the mix together.

  • Step 8

    Put the mix back on the stove and heat it up.

  • Step 9

    Garnish with cheese, croutons, and parsley.
