Easy Lasagna Rolls with Spinach and Ricotta

ingredients
- 1 tablepsoon extra virgin olive oil,
- 1 package lasagna noodles, cooked and drained
- 1 pound ground beef,
- 1/2 yellow onion, diced
- 1 cup ricotta,
- 1 cup mozzarella cheese + 1 extra cup for the top, shredded
- 1 large egg,
- 3 ounces fresh spinach, chopped
- salt, to taste
- pepper, to taste
- 2 cups marinara sauce,
Method
Step 1
Boil the lasagna noodles by following the directions on the box.
Step 2
In a pan on medium heat, add 1 Tablespoon of extra virgin olive oil.
Step 3
Sauté 1 pound of ground beef for 3 minutes. Add 1/2 teaspoon of salt and pepper. Stir occasionally.
Step 4
Chop 1/2 of an onion and add to the beef. Sauté for another minute.
Step 5
Add in 3 ounces of chopped spinach, and sauté for 2 minutes. Once done, set aside to cool.
Step 6
Meanwhile in a separate bowl combine the ricotta, mozzarella cheeses, egg, as well as a pinch of salt and pepper. Stir well, then add to the skillet and combine with the beef and spinach.
Step 7
Preheat the oven to 350F.
Step 8
Prepare an oven-safe dish for lasagna, by spreading 1/2 cup marinara sauce on the bottom.
Step 9
On each cooked lasagna noodle spread the beef mixture.
Step 10
Roll it up and place it in an oven-safe dish. (you could also cut each roll in half)
Step 11
Spread marinara sauce on top of the lasagna rolls. Sprinkle 1 cup of mozzarella cheese.
Step 12
Cover with foil. Bake for 30 minutes.
Step 13
Take off the foil and bake for another 5 minutes. (I broil the last 2 minutes to get that darker color on top.)
