ingredients

  • 3 peaches, firm ripe
  • 8 ounces burrata
  • 1 handful of fresh basil leaves,
  • 4 slices sourdough bread
  • 1/4 cup extra virgin olive oil
  • 2 tablespoon wine vinegar, red or white
  • 1 clove garlic
  • 1 teaspoon Dijon mustard
  • sea salt, to taste
  • ground black pepper, to taste

Method

  • Step 1

    Whisk 1/4 cup extra virgin olive oil, 2 tablespoons wine vinegar, 1 garlic clove, 1tsp dijon mustard, a handful of fresh basil leaves, and sea salt & ground black pepper, to taste.

  • Step 2

    Wash the peaches, remove the pit, and cut into 1/3-inch slices. Lightly grease a grill pan with olive oil, make sure the pan is hot before adding peaches. Grill peach slices for about 30 sec on each side.

  • Step 3

    Arrange peaches and burrata cheese on a serving plate.

  • Step 4

    Brush bread slices with olive oil and grill for 1 min on each side.

  • Step 5

    Add fresh basil leaves and drizzle with the dressing.
