Chicken in a Creamy Mushroom Sauce

ingredients
- 2 chicken breasts
- 2 tablespoons unsalted butter
- salt, to taste
- black pepper, to taste
- 2 cups mushrooms, sliced
- 2 tablespoons unbleached flour
- 1 Handful dill, chopped
- 1 onion, chopped
- 150 millileters half and half
- 150 millileters chicken stock
Method
Step 1
Preheat the oven to 350F.
Step 2
Salt and pepper on both sides of the boneless skinless chicken breasts.
Step 3
In a pan, on medium-high heat, melt 2 tablespoons of butter (take the foam off if any).
Step 4
On medium heat, with melted butter, fry the chicken breasts for 3-4 minutes on each side. (for golden brown color).
Step 5
Transfer the chicken to an oven-safe pan.
Step 6
Bake the chicken breast for 10 minutes.
Step 7
In the same skillet where you browned the chicken, add chopped onions and fry for 5 minutes.
Step 8
Add the sliced mushrooms, then stir and fry for 5 minutes with onions.
Step 9
Stir in 2 Tablespoons of flour, then let it blend together for 2 minutes.
Step 10
Pour in 150ml of chicken stock and bring it to boil.
Step 11
Add salt and pepper.
Step 12
Stir in 150ml of half and half, mix well.
Step 13
On low heat, let it sauté for 3 minutes.
Step 14
Add in a handful of chopped dill.
Step 15
Put the chicken back into the pan with the sauce, then put a lid on it and let it sauté for 2 minutes.
