ingredients

  • 1 tablespoon unsalted butter
  • 2 pounds chicken thighs
  • 1 onion, chopped
  • 4 Yukon potatoes, peeled and chopped
  • 1 carrot, grated
  • salt, to taste
  • black pepper, to taste
  • 1 tablespoon tomato paste
  • 4 quarts water

Method

  • Step 1

    Into an iron-cast pot, ( if you don’t have one, just a pot will work too) melt 1 Tablespoon of butter.

  • Step 2

    Put chicken pieces in the pot, sprinkle 1/4 teaspoon of salt, and 1/4 teaspoon of black pepper.

  • Step 3

    On medium-high heat sear chicken pieces, just until the outside of the chicken is brown.

  • Step 4

    Take out the chicken and add in the potato to the pot, then sear just until it’s browned up.

  • Step 5

    Add the chicken back into the pot with potatoes.

  • Step 6

    Add in chopped onion, then sear for 2 minutes, stirring.

  • Step 7

    Add in grated carrot and stir in 1 Tablespoon of tomato paste.

  • Step 8

    Fill the pot with water, just enough to cover the potato and chicken.

  • Step 9

    Put on lowest heat, salt, and pepper to taste, and close the lid.

  • Step 10

    Braise for 30-45 mins until the potato is soft.

  • Step 11

    It is better served right away, so enjoy!
