Sunshine Breakfast Bowl
- 2 eggs
- 5 mini bell peppers
- 1/2 sliced zucchini
- 1 cups fresh flat leaf spinach
- 1/2 sliced red onion
- 1/8 cups olive oil
- 1 teaspoons garlic powder
- 1/2 teaspoons salt
- 1/2 teaspoons black pepper
- 1/2 teaspoons everything but the bagel seasoning

Marinated Red Onions
- 1/2 sliced red onion
- 1/4 cups olive oil
- 1 tablespoons apple cider vinegar
- 2 teaspoons oregano
- 1/2 teaspoons red pepper flakes
- 1 teaspoons salt
- 1 teaspoons cracked black pepper
Method
Step 1
Make your Marinated Red Onions. Slice your red onion thinly and add to a small bowl. Stir with the olive oil, apple cider vinegar, oregano, red pepper flakes, salt and pepper. Mix well and let it sit while you make the Sunshine Breakfast Bowl.
Step 2
Scrambled the eggs and season with salt + pepper. Cook the eggs on low heat to desired liking.
Step 3
Toss the zucchini and peppers with garlic powder, salt and pepper and sauté in olive oil until soft.
Step 4
Layer the bowl with the spinach first, then veggies, then eggs, and then the marinated red onions. Sprinkle everything but the bagel seasoning on top and enjoy!
