ingredients

  • 2 pack GF puff pastry
  • 2 liter water
  • 125 grams sugar
  • 2 fresh juice of lemons
  • 2 tabelspoons rose water
  • 500 gram unsalted pistacchio
  • 1 tablespoon cinnamon
  • 2 tablepsoon melted butter/almond oil

Method

  • Step 1

    For the gluten free puff pastry dough, follow the directions on the packaging - most of the time you need to take out from the fridge a couple minutes before rolling out.

  • Step 2

    Lets the start by making the syrup, which is simply combing the sugar, the water the lemon juice and the rose water if you want. Mix the ingredients in a pot until they have all dissolved, put it on low heat for another 5/10min and put aside to cool down. Grind the pistachios into smaller pieces either by hand or in a food processor and add the cinnamon, tablespoon of sugar and the teaspoon of rose water.

  • Step 3

    set the oven at 190° . Always put some wax paper on the baking tray before putting any type of pastry so it doesn’t stick. For the gluten free puff pastry simply gently roll it out and then brush it with the oil and spread the nuts across and add the second layer of the pastry - it will puff up during the baking. Brush a little oil on the top part. Do rectangular cuts on the top part and Bake it for 20min. Let it cool a couple minutes and pour the syrup over.g
