ingredients

𝐃𝐫𝐲 𝐈𝐧𝐠𝐫𝐞𝐝𝐢𝐞𝐧𝐭𝐬

  • 2 1/2 cups fine stoneground wholemeal flour or all purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 cup dairy-free dark chocolate chips

  • 2 medium-sized ripe bananas, mashed
  • 1 1/2 cups plant-based milk (plain flour might need slightly less milk depends on your flour)
  • 1 tablespoon apple cider
  • 1/3 cup neutral cooking oil (I used avocado oil)
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract

Method

  • Step 1

    Pre-heat oven to 180 Celsius and grease a loaf baking dish. In a large mixing jug, combine milk with apple cider vinegar and set aside to curdle for at least 5 mins.

  • Step 2

    In a large mixing bowl, sift all the dry ingredients apart from chocolate chips and make a well in the middle. Add in the rest of wet ingredients into the milk mixture and stir to combine.

  • Step 3

    Pour wet ingredients into dry and stir until just combined. Fold in chocolate chips and pour into the pre-greased baking dish (avoid chocolate chips at the bottom).

  • Step 4

    Sprinkle some more chocolate chips on top and pinch of raw sugar (optional but highly recommend). Bake for 40-45 mins until nicely golden and a stick come out clean in the center.

  • Step 5

    Allow cool down before slicing. Serve warm with PB and raspberry chia jam!
