Chili Oil Noodles with Tofu & Mushrooms

These easy Chili Oil Noodles are made with tofu and tender mushrooms and carrots. It's a flavor packed meal that easy to make for lunch or dinner.

ingredients
- 1 packet of tofu sheets,
- 2 carrots, finely diced
- 9 dried shiitake mushrooms, hydrated overnight or at least 1 hour in boiling water, drained and sliced
- 1 spring onion, finely sliced
- 1/3 thumb-sized ginger,, minced
- 2 tablespoons light soy sauce
- 2 teaspoon dark soy sauce
- 1 teaspoon raw sugar
- 1 teaspoon Chinese five spices
- Oil for cooking
- Bok choy
- Noodles of your choice

Chili Oil Sauce
- 1 tablespoon light soy sauce
- 1 teaspoon Chinese vinegar
- 1 teaspoon chilli flakes
- 1 teaspoon sesame seeds
- Some minced garlic
- Slices of spring onion
Method
Step 1
In a frying pan, sauté spring onion and ginger until fragrant. Add in carrots and shiitake mushrooms, toss to continue sautéing for 3-5 minutes.
Step 2
Add in tofu sheets, season with spices & sauces and toss to combine until cooked (around 5-7 mins).
Step 3
Cook and drain noodles as instructed and set aside.
Step 4
Blanch bok choy lightly, drained and set aside. In the serving bowl, add in all the liquid sauce in the bottom, then add in noodles & bok choy and finally chilli flakes, garlic, spring onion & sesame seeds on top.
Step 5
Heat up more cooking oil and pour over chilli flakes, garlic and spring onion. Stir up and enjoy straight away
