ingredients
- 600 grams firm tofu
- 2 heaping tablespoons cornstarch
- 2 heaping tablespoons korean chili flakes
- 3 tablespoons light soy sauce
- 2 tablespoons mirin
- 2 tablepsoons shaoxing wine
- 1 tablespoon raw sugar
- 1 teapsoon dark soy sauce
- 1/2 cup water
- 1 spring onion, thinly sliced
- 1 tablespoon sesame seeds
- 4 cloves garlic, minced
- Oil for cooking
- Salt and pepper
- 1 1/4 cups short grain rice
- 1 cucumber, thinly sliced
Method
Step 1
Cook rice according to packet instructions. Pat tofu dry and cut into thick bite size pieces (2-3 cm squares) and coat tofu with cornstarch evenly
Step 2
In a large frying pan/skillet, with medium-high heat, heat up oil and pan fry tofu until nicely golden crunchy on both sides. Remove tofu from the pan and set aside
Step 3
While tofu is cooking, in a mixing jug, add in chili flakes, soy sauce, shaoxing wine, mirin and water and mix until well combined
Step 4
Return to the same frying pan, with medium-high heat, heat up oil and sautè garlic and spring onion until fragrant
Step 5
Add in cooked tofu and pour the sauce mixture into the pan and gently toss to combine sauce and tofu together and reduce the heat to medium-low heat
Step 6
Sprinkle sesame seeds over and let it simmer for a few minutes until the sauce has thickened and the tofu is well coated with sauce
Step 7
Drizzle sesame oil and garnish with spring onion threads and serve up with rice and cucumber salad
