For the Caramelized Onions
- 1 pound yellow onions, peeled and thinly sliced
- 2 tablespoons Chosen Foods 100% Pure Avocado Oil
- 1/2 teaspoon sugar
- 1/4 teaspoon kosher salt
- 2 garlic cloves, peeled and chopped
- 3 tablespoons dry red wine (such as Malbec)
- 1 pinch of cinnamon
- Freshly ground black pepper, to taste

- 1/4 cup Chosen Foods Vegan 100% Pure Avocado Oil Mayo
- 1 tablespoon balsamic vinegar
- 1 garlic clove, peeled and minced
- Kosher salt, to taste
- Freshly ground black pepper, to taste

For the Sandwich
- 2 tablespoons Chosen Foods 100% Pure Avocado Oil, divided
- 8 ounces maitake mushrooms, seasoned with salt and pepper
- 1 baguette, cut into two equal pieces and halved lengthwise
- 4 slices of vegan provolone (or gruyère cheese)
- Fresh arugula, dressed in balsamic and Chosen Foods 100% Pure Avocado Oil
- Fresh thyme leaves (optional), for garnish
Method
To make the Caramelized Onions:
Step 1
Heat the avocado oil in a large skillet over medium heat. Add sliced onions and cook, stirring often, until onions soften, about 20 minutes.
Step 2
Add the sugar, salt, and cinnamon. Continue cooking, stirring every 2-4 minutes, for another 20 minutes until onions are deeply caramelized.
Step 3
Add the chopped garlic and cook for 2 minutes.
Step 4
Pour in red wine to deglaze the pan, scraping up any brown bits. Cook for 2-3 minutes until wine has mostly evaporated. Set aside until ready to use.
To Prepare the Balsamic Aioli:
Step 1
In a small bowl, whisk together the avocado mayo, balsamic vinegar, and minced garlic. Season with salt and black pepper to taste. Set aside.
To Cook the Mushrooms:
Step 1
Heat the avocado oil in a skillet over medium-high heat. Add mushrooms in a single layer and cook for about 6 minutes undisturbed until deeply golden brown. Flip mushrooms and cook the other side for an additional 6 minutes. Season with salt and pepper to taste.
Toast the Baguette:
Step 1
Brush the cut sides of the baguette with the remaining 1 tablespoon avocado oil. Place bread, in the pan you cooked the mushrooms in, cut side-down and toast until golden and crisp.
Assemble the Sandwiches:
Step 1
Spread the balsamic aioli on the toasted sides of the baguette.
Step 2
Layer caramelized onions, mushrooms, and vegan provolone or gruyère cheese on the baguette halves.
Step 3
Place sandwiches under the broiler for 1-2 minutes, until cheese is melted and bubbly.
Step 4
Add the arugula and top sandwiches with thyme if desired. Serve immediately
