ingredients

  • 1 1/2 cups old fashioned rolled oats
  • 1/2 cup coconut flakes
  • 1/2 slivers raw almond
  • 1/2 cup shelled pistachios
  • 1/4 teaspoon salt
  • 3 tablespoons Olive OIl
  • 1/3 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1 tablespoons brown sugar

Method

  • Step 1

    Preheat Oven to 325 degrees F

  • Step 2

    Line a baking sheet with parchment paper or silicone mat

  • Step 3

    In a large bowl, combine oats, coconut flakes, almonds, pistachios, brown sugar, and salt. Stir to mix well.

  • Step 4

    In a small saucepan, combine maple syrup and oil. Simmer over medium heat for 2-3 minutes until completely emulsified. Add in the vanilla extract and give it a quick whisk.

  • Step 5

    Pour over the oats mixture and stir to combine thoroughly.

  • Step 6

    Transfer granola mix to the baking sheet and spread into a thin, even layer.

  • Step 7

    Bake for 20-25 minutes

  • Step 8

    Granola should be golden brown in color

  • Step 9

    Remove from oven and let cool for 5 minutes. Break it into chunks and store in an airtight container for up to 2 weeks!
