Cashew Milk

  • 1/2 cup Raw Cashews
  • 1 1/2 cups Water

Method

Cashew Milk

  • Step 1

    For this recipe, I heated up my water and soaked them for a few hours. The longer you allow to soak, the creamier you milk will be.

  • Step 2

    FOR QUICK SOAK: This is probably the fastest way. It takes 15 minutes tops! Add your cashews to a pot and fill with enough water to cover. Bring the water to a boil and continue boiling for 15 minutes. Drain and rinse the softened cashews. All done!

  • Step 3

    In a high speed blender, blend your cashews, including 1.5 cups water from soaking, until smooth and creamy. About 1-2 minutes. Set aside until ready to use.

Roasted Butternut Squash

  • 2 1/2 cups cubed Butternut Squash
  • 1 tablespoons Olive Oil
  • 2 Garlic Cloves
  • 1/4 teaspoons Smoked Paprika
  • To Taste Salt & Pepper

Roasted Butternut Squash

  • Step 1

    Preheat oven to 400 degrees & prepare a baking sheet with parchment paper.

  • Step 2

    In a medium bowl, toss your butternut squash with your olive oil, 1/4 tsp smoked paprika, salt & pepper.

  • Step 3

    Place you squash on prepared sheet and add your two garlic cloves.

  • Step 4

    Bake for 30 minutes, tossing half way.

  • Step 5

    Now ready to assemble your Mac & Cheese!

Mac & Cheese

  • 3 tablespoons Nutritional Yeast
  • 1/4 teaspoon Smoked Paprika
  • 1/2 teaspoon Onion Powder
  • 1/8 teaspoon Ground Turmeric
  • 1/8 teaspoon Cayenne
  • 1 teaspoon Dijon Mustard
  • 1 tablespoon Lemon Juice
  • To Taste Salt & Pepper
  • 2 cups cooked according to package directions Macaroni Pasta
  • 1/4 cup Pasta Water, from cooked macaroni

Roasted Butternut Squash Mac & Cheese

  • Step 1

    In a high speed blender, add your cashew milk, roasted butternut squash, nutritional yeast, smoked paprika, onion powder, ground turmeric, cayenne, dijon, lemon juice, and salt & pepper to taste. Blend until creamy.

  • Step 2

    In a dutch oven, or pot of choice, pour in your butternut “cheese” sauce over medium heat, stir for about 2 minutes to allow sauce to warm up and thicken.

  • Step 3

    Add in your pasta and water. Mix all together. Serve immediately.
