- 6 ounces mascarpone
- 3 tablespoons powdered sugar, divided
- 1 shot espresso

- 4 ounces heavy whipping cream

Use a food processor to blitz the lady fingers into crumbs. Measure to make sure you have 3/4 cup ladyfinger crumbs. If you need more, blitz some extra.

In a large bowl, add in the crumbs plus mascarpone, 1 tbsp powdered sugar, and espresso. Mix to evenly combine.

Place the cocoa powder on a plate. Use your hands to form the lady finger mixture into ping pong sized balls. Roll them in the cocoa powder until evenly coated. Place them onto a plate and into the fridge for about 30 minutes.
