  • 2 ripe plums
  • 2 ripe peaches
  • 2 ripe nectarines
  • 1/4 cup plus more for brushing the fruit Chosen Foods 100% Pure Avocado Oil
  • Chosen Foods 100% Pure Avocado Oil Spray
  • 1 (8 ounce) wheel of vegan Brie
  • 2 teaspoons Dijon mustard
  • 2 teaspoons maple syrup
  • 1 tablespoon apple cider vinegar
  • 1/2 teaspoon kosher salt
  • Pinch of freshly ground black pepper
  • as need for topping Granulated sugar
  • 1 small sliced ` baguette

Method

  • Step 1

    Slice the flesh off the plums, peaches, and nectarines into large pieces. Lightly brush them with Chosen Foods 100% Pure Avocado Oil using a pastry brush.

  • Step 2

    Spray a grill pan with Chosen Foods 100% Pure Avocado Oil Spray and heat over medium-high. Place the fruit pieces flesh side down on the grill pan. Grill for about 4 minutes, then carefully rotate 45 degrees and cook for an additional 3 minutes to achieve nice grill marks. Remove and set aside.

  • Step 3

    In a small bowl, whisk together Dijon mustard, maple syrup, apple cider vinegar, salt, and pepper. Gradually add about 1/4 cup of Chosen Foods 100% Pure Avocado Oil, whisking continuously until the dressing emulsifies.

  • Step 4

    Arrange the grilled fruit on a large serving plate and drizzle with the dressing. Cut the vegan brie into 1-inch cubes and place a cube on each piece of grilled fruit.

  • Step 5

    Sprinkle a thin layer of granulated sugar over the vegan brie cubes. Use a kitchen torch to caramelize the sugar until golden and crispy.
