This recipe is for major garlic lovers. It uses three whole bulbs of garlic, shallots, and freshly grated parmesan for maximum flavor.

  • 3 shallots
  • 3 bulbs garlic
  • 4 tablespoons olive oil
  • 2 tablespoons Kosher salt
  • 1 stick softened unsalted butter
  • 1 teaspoon crushed red pepper flakes
  • 1 teaspoon Kosher salt
  • 1 teaspoon freshly cracked black pepper
  • Zest of 1 lemon
  • 4 slices sourdough bread
  • 1/2 cup freshly grated parmesan cheese, plus more for serving
  • Finely chopped fresh parsley, for garnish

Method

  • Step 1

    Preheat oven to 375°F. Cut the tops off of the shallots and garlic bulbs. Drizzle olive oil onto the shallots and garlic, plus kosher salt. Wrap the shallots and garlic in aluminum foil tightly and bake for an hour or more, until the garlic and shallots are extremely tender. Leave oven on for baking the bread later.

  • Step 2

    In a large bowl, combine softened butter plus the cooked shallots and garlic. Add in crushed red pepper flakes, salt, pepper, lemon zest, and lemon juice.

  • Step 3

    Spread this mixture evenly among the slices of sourdough, and sprinkle the parmesan on top of each slice. Bake for 10-15 minutes, until the top is golden brown. Garnish with extra parmesan and fresh parsley. Enjoy!
