Upgrade your grilled cheese game by adding dill pickle chips to your sandwich! We also added ham and dill pickle-flavored potato chips to our sandwich, but those are optional. 

Recipe Description

Three types of cheese (cheddar, american, and fontina) are sandwiched between slices of sourdough bread in this easy dill pickle grilled cheese recipe. In addition to cheese, we added sliced ham and dill pickle spears to the sandwich before grilling it on the skillet. 

Once the bread is golden-brown, remove it from the heat. If using, add the potato chips into the sandwich before serving.

    Sourdough bread: Has the sour flavor we are seeking to complement tangy pickles. The texture is also fluffy, yet robust enough to accomodate a sandwich with gooey cheese & fillings.

    Cheese: To be honest, you could use almost any kind of cheese and it would be delicious. We used sharp cheddar, mild American cheese, and buttery fontina to contrast the briny pickle flavor.

    Dill: This fresh herb adds the fresh, bright flavor we associate with pickles.

  • 2 tablespoons softened butter
  • 1 tablespoon chopped fresh dill
  • Pinch of salt
  • Pinch of black pepper
  • Pinch of red pepper flakes
  • 2 medium slices sourdough bread
  • 2 ounces freshly grated sharp cheddar cheese
  • 4 slices American cheese
  • 2 slices deli ham
  • 2 ounces freshly grated fontina cheese
  • patted dry 6-8 dill pickle coins
  • Mayonnaise
  • optional, for serving Dill pickle potato chips

Method

  • Step 1

    In a small bowl, combine the softened butter, dill, salt, pepper, and red pepper flakes. Stir to evenly mix.

  • Step 2

    On one of the slices of bread, spread on the butter mixture. Top that with the shredded sharp cheddar and 2 slices American cheese. Layer on the slices of ham. Evenly spread out the pickle coins, then sprinkle on the shredded fontina. Finish off with 2 more slices American cheese, then close the sandwich with the other piece of bread.

  • Step 3

    Heat a large pan on medium-low. Spread a thin layer of mayonnaise on the top of the sandwich, then place that side down onto the pan. Cook, using a sandwich press if you have, for 5-7 minutes. The bottom of the sandwich should be golden but not burnt.

  • Step 4

    Spread a thin layer of mayonnaise on the top (other side) of the sandwich, then flip the sandwich and repeat cooking/pressing on this side. When both sides are golden and all the cheese is melted, remove from heat.

  • Step 5

    Open the sandwich and place in some of the dill pickle potato chips. Serve and enjoy!
