Caprese Pasta Salad with Avocado

Pasta salad season is upon us and this caprese pasta salad is the perfect recipe to whip up. It's studded with some of our favorite summer ingredients – basil, mozzarella, and fresh tomatoes.

You can store in the fridge for a day or 2, but the avocados may oxidize or discolor.

ingredients
- Kosher salt
- 1/2 pound small pasta of choice
- 1 (8 ounce) package mozzarella pearls
- 2 cups quartered cherry tomatoes
- 1 peeled and sliced avocado
- 2 cups microgreens or arugula
- 1 cup chiffonade basil
- 1/2 tablespoon honey
- 1/2 tablespoon Dijon mustard
- 2 tablespoons balsamic vinegar
- 1 teaspoon red pepper flakes
- 1 teaspoon black pepper
- 1/4 cup olive oil
Method
Step 1
Bring a large pot of water to boil and season it with kosher salt.
Step 2
Once boiling, add in the pasta and cook for 8 minutes (or until al dente).
Step 3
Drain and allow to cool slightly.
Step 4
Dump cooked pasta into a large bowl.
Step 5
Add in the mozzarella pearls, cherry tomatoes, avocado slices, greens, and basil.
Step 6
In a small bowl, add in the honey, mustard, vinegar, red pepper flakes, black pepper, and 1 tsp salt.
Step 7
Drizzle in olive oil while whisking, to create a dressing.
Step 8
Drizzle the dressing over the pasta salad and mix the pasta salad well.
Step 9
Serve and enjoy!
