ingredients
- 2 tablespoons olive oil
- 1 cup mushrooms, washed and sliced
- 8 ounces ham, cubed
- 1/2 red onion, diced
- 1 teaspoon garlic paste
- 1 teaspoon turmeric
- 3 tablespoons brown sugar
- Kosher salt and freshly ground pepper, to taste
- 2 medium carrots, peeled and diced
- 2 tablespoons orange zest
- 1/2 cup raisins
- 1/2 cup skin-on whole almonds, finely chopped
- 2 cups white rice, rinsed well in cold water
- 1 cup orange juice
- 1 cup water
- Fresh parsley, finely chopped for serving
Method
Step 1
Add olive oil to a medium pot. Cook mushrooms until juices have released, about 5 minutes. Transfer the mushrooms to a small bowl and set aside
Step 2
Using the same pot, crisp ham until lightly golden, 3-5 minutes. Add onion, cook together for 3 minutes. Stir in garlic paste, turmeric, and brown sugar. Season well with salt and pepper.
Step 3
Add carrots, cook 5 minutes until tender. Stir in orange zest, raisins, and almonds.
Step 4
Stir in rice, orange juice, and water. Bring to a simmer and cover pot with a lid. Cook for 18 minutes. Turn off heat and remove lid. Let sit untouched for 10 minutes. Use a fork to fluff up rice.
Step 5
Stir in parsley and reserved mushrooms, adjust seasonings. Serve immediately.
