- 1/2 cup olive oil
- 3 tablespoons honey
- 1/4 cup apple cider vinegar
- 1 1/2 teaspoons chili powder
- 1 teaspoon garlic powder
- 1 teaspoon kosher salt
- 1 (14.5 ounce) can Red Gold Diced Tomatoes, drained
- 1 (15 ounce ) can black-eyed peas,, drained and rinsed
- 1 (15 ounce ) can black beans, drained and rinsed
- 1 (15 ounce ) can sweet corn, drained
- 1 red onion, diced
- 1 red bell pepper, seeded and diced
- 1 yellow pepper, seeded and diced
- 1 jalapeño, seeded and diced
- 2 tablespoons chopped fresh cilantro
Method
Step 1
In a small bowl, whisk together the olive oil, honey, apple cider vinegar, chili powder, garlic powder, and salt. Set the dressing aside.

In a large bowl, combine the black beans, black-eyed peas, corn, red onion, red and yellow bell peppers, tomatoes, and jalapeño.
