  • 1/2 cup olive oil
  • 3 tablespoons honey
  • 1/4 cup apple cider vinegar
  • 1 1/2 teaspoons chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon kosher salt
  • 1 (14.5 ounce) can Red Gold Diced Tomatoes, drained
  • 1 (15 ounce ) can black-eyed peas,, drained and rinsed
  • 1 (15 ounce ) can black beans, drained and rinsed
  • 1 (15 ounce ) can sweet corn, drained
  • 1 red onion, diced
  • 1 red bell pepper, seeded and diced
  • 1 yellow pepper, seeded and diced
  • 1 jalapeño, seeded and diced
  • 2 tablespoons chopped fresh cilantro

Method

  • Step 1

    In a small bowl, whisk together the olive oil, honey, apple cider vinegar, chili powder, garlic powder, and salt. Set the dressing aside.

  • Step 2

    In a large bowl, combine the black beans, black-eyed peas, corn, red onion, red and yellow bell peppers, tomatoes, and jalapeño.

  • Step 3

    Pour the prepared dressing over the salad and toss gently to combine, ensuring all ingredients are evenly coated.

  • Step 4

    Sprinkle the chopped cilantro over the top and toss again.

  • Step 5

    Serve the cowboy caviar with tortilla chips or as a vibrant side dish to grilled meats or fish.
