Pineapple Bliss Balls

  • 1 cup canned pineapple
  • 11/4 cups gluten free oats
  • 1 cups almonds
  • 2 tablespoons maple syrup
  • 1/2 cups shredded coconut
  • 7 dates
  • 1 teaspoons cinnamon


  • Step 1

    Soak dates in warm water for ten minutes, and remove skin

  • Step 2

    In a food processor, blend pineapple, oats, almonds, and dates until slightly smooth. I like to leave some bigger chunks of almonds.

  • Step 3

    Stir in the rest of the ingredients. Roll into balls, and roll the balls in shredded coconut.

  • Step 4

    Refrigerate for an hour and serve!
