For the Pancakes
- 11/2 cups flour
- 31/2 teaspoons baking powder
- 1 teaspoon salt
- 1 tablespoon sugar
- 11/4 cups oat milk
To Make the Pancakes
Heat lightly oiled pan over medium heat.
Combine dry ingredients in medium bowl. Make a well and pour in egg and milk. Stir well.
Spoon batter onto pan, and wait to flip until you see the bubbles. Cook until golden on each side.
Top with earl grey coconut cream and pansies or any other edible flowers!
For the Earl Grey Whipped Coconut Cream
- 3 bags earl grey tea
- 1 can coconut cream
- 1 heaping tablespoon powdered sugar
To Make the Earl Grey Whipped Coconut Cream
Bring coconut cream almost to a boil in a saucepan. Remove from heat and steep with earl grey tea bags. Let sit for three hours for the best infusion. Pour into container and refrigerate overnight.
Take out and whip with a hand mixer for 3 minutes or until fluffy consistency. Add in sugar as you you’d like for a sweeter taste.
