ingredients
- 1 tablespoon vegetable oil
- 1 12-ounce package Cascadian Farms Organic Hearty Blend
- 1/3 cup vegetable broth
- 4 cups arugula
- 2 medium cucumbers, diced
- 1 cup cherry tomatoes, quartered
- 1 medium red onion, chopped
- 1/2 green bell pepper, diced
- 1 tablespoon crumbled feta cheese
ingredients
For the Dressing:
- 1 tablespoon vegetable oil
- 1 fresh or dried oregano, to taste
- kosher salt, to taste
- freshly ground black pepper, to taste
Method
Step 1
Heat oil in a skillet over medium heat. Add Cascadian Farms Organic Hearty Blend frozen mix and cook for 5 minutes.
Step 2
Add vegetable broth and continue cooking for 5 minutes more. Remove from heat, allow to cool.
Step 3
In a large bowl, combine arugula, cucumbers, tomatoes, red onion, pepper and feta. Drizzle with olive oil. Season with oregano, salt and pepper to taste. Top with cooled vegetable blend before serving.
