STRAWBERRY LEMON COFFEE CAKE This strawberry lemon coffee cake is the perfect addition to make your morning extra special! Mixes in one bowl in 10 minutes. INGREDIENTS 1 ½ cups granulated sugar 2 cups flour 1 tablespoon baking soda ¾ cup olive oil 2 eggs 1 tablespoon finely grated lemon rind 2 tablespoons lemon juice ½ cup Nancy's Organic Whole Milk Yogurt 2 mashed bananas Lemon Vanilla Bean Cream Cheese Frosting 1 package cream cheese, room temperature ¾ cup powdered sugar ¼ cup lemon juice 1 teaspoon vanilla bean paste or the interior scrapings of 1 vanilla bean Serve with: strawberries and sliced almonds INSTRUCTIONS Mix all cake ingredients together until just combined. Pour into a greased bundt pan. Bake at 350 for 40-45 minutes. Allow to cool completely (at least 1 hour). Whip icing together. If lumps occur place in microwave for 30 second increments stirring vigorously until lumps are gone. Pour icing over cake, top with sliced almonds and strawberries (lemon zest would also be a lovely addition if you can't do almonds) and serve.
GINGERBREAD CRUNCH MAGIC CAKE This Gingerbread Crunch Magic Cake is a festive spiced holiday twist on the classic magic cake. INGREDIENTS 4 eggs, separated ¾ cup sugar 4 tbsp molasses ½ cup Land O’ Lakes butter 1 teaspoon vanilla bean paste 3 tsp pumpkin pie spice 2 tsp ginger 1 cup all purpose flour 2 cups Silk cashew milk, slightly warmed Streusel: 2 tablespoons butter 2 tablespoons brown sugar ¼ cup flour ½ cup pecans, chopped ½ cup old-fashioned oatmeal ¼ cup chopped candied ginger ½ teaspoon cinnamon INSTRUCTIONS Preheat oven to 325 degrees F. Grease an 8x8 baking dish (we prefer metal as it heats faster and creates more distinct layers in our testing). Beat egg whites in a mixer with whisk attachment to stiff peaks (when lifted whisk out of egg whites the peak formed should stay straight up and not collapse at the top). Remove from mixer and set aside. Beat yolks with sugar until visibly lightened and fluffy about 4 minutes. Add molasses, melted butter, vanilla bean paste, spices and flour slowly. Add warmed cashew milk and beat until combined. Add egg whites to batter and fold or whisk them in. The batter will NOT be smooth and should be lumpy still. Pour into greased baking dish. Bake for 50-70 minutes. Ovens greatly vary so check at 50 minutes and gently shake the rack. If the center is unset and very wobbly it needs more time. The top may over brown before the middle is fully cooked so tent with foil on top if this occurs. We have much better results with metal pans over a glass and recommend them. The size is also crucial for layer formation so do not substitute with a larger or smaller pan. Streusel: In a large saucepan melt butter. Add sugar and stir until bubbly. Add flour, pecans, oatmeal, ginger, and cinnamon. Toss together and cook for 2-3 minutes until well combined. Pour over cake top and allow the entire cake to cool completely. Can be chilled for an even firmer texture.
PUMPKIN FRENCH TOAST WAFFLES 10 minutes, some pantry staples and a waffle iron are all you need! PUMPKIN FRENCH TOAST WAFFLES INGREDIENTS 8-10 pieces bread (we like whole grain) 6 eggs ½ cup milk ½ cup pumpkin puree 2 tablespoons pumpkin pie spice Pinch of nutmeg 2 teaspoons vanilla extract Serve with: butter, maple syrup, pomegranate seeds, almonds, pepitas (pumpkin seeds), whipped cream Non-stick spray (for griddle) DIRECTIONS Preheat waffle iron and spray with nonstick spray or brush with an alternative fat source. Whisk eggs, milk, pumpkin, spices, and vanilla together. Remove crusts from bread if desired. Soak 4 pieces at a time until thoroughly saturated (about 1 minute). Transfer to waffle iron and press down. Cook through, time varies per machine. Leave for an extra minute or two for extra crispy or just until browned for more moist French Toast. Serve with butter, maple syrup, pomegranate seeds, almonds, pepitas (pumpkin seeds) and whipped cream (if desired).
