Ingredients 2 slices country loaf or similarly crusty bread 7 thin slices of Tuscan rubbed fontina 3 marinated artichoke hearts, roughly chopped 1 handful mixed olives, roughly chopped a pad of butter
Method Heat the pad of butter in a skillet over a high/moderate heat. Build the sandwich with half of the slices of cheese, then the artichoke and olives, and the remaining cheese before topping with the other slice of bread.
Add to the skillet and weigh down using an additional skillet or pan and some cans and press down. Cook until brown and crispy (about 4-5 minutes,) flip, cook for an additional 3-4 minutes and eat immediately.
