ingredients

  • 1/2 cup oat
  • 1 cup spelt flour
  • 1/4 cup almond powder
  • 1/3 cup cane sugar
  • 1 tablespoon cinnamon
  • 1 pinch sea salt
  • 2/3 cup coconut oil
  • 10 ounces raspberries
  • 10 ounces rhubarb
  • 2 tablespoons agave syrup
  • 2 tablespoons chia seeds

Method

  • Step 1

    Pre-heat your oven at 175°C 350°F. Mix together the dry ingredients.

  • Step 2

    Add then the solid coconut oil and almond butter with yours hands gently, in order to form the crumble texture. Take ⅔ of the mixture and press it with your fingers into a baking pan (9x13). Bake for 12 minutes.

  • Step 3

    Meanwhile, cut your rhubarb and heat it with the raspebrries. Add the agave syrup. After 8 minutes, add the chia seeds and let it rest a bit.

  • Step 4

    Pour the fruit mixture over the bottom crust. With the rest of the dry mixture, form crumbles and put them over the blackberry layer. Bake 25 minutes at 175° 350°F, and then 5 minutes at 220° 425°F.
