ingredients

  • 3 1/2 ounces margarine, or butter (room temperature)
  • 1 3/4 ounces white sugar
  • 1 3/4 ounces cane sugar
  • 1 egg
  • 1 tablespoon peanut butter
  • 4 1/2 ounces spelt flour
  • 1 3/4 ounces oat
  • 1 tablespoon maïzena
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon sea salt
  • 5 1/4 ounces chocolate, (a mix of dark and milk)
  • 2 2/3 ounces pecan and nuts

Method

  • Step 1

    Combine the margarine with the sugar with a whip until light and fluffy. Then add the egg and mix together.

  • Step 2

    In another bowl, combine spelt flour, oat, maïzena, baking powder, bicarbonate and sea salt. Cut the chocolate in little pieces and crunch the nuts. Add to the bowl.

  • Step 3

    Combine everything together and let it rest in the fridge for at least 2 hours (or even overnight)

  • Step 4

    Preheat your oven at 200C or 375F. Form 9-12 cookies in ball shape, add 1/2 teaspoon of peanut butter in the center if you feel like it ; ) Bake for 12-14 minutes until the sides get a nice golden/crispy color. Let it cool completely before tasting (i know, it’s hard).
