ingredients

  • 1 large carrot
  • 2 1/2 ounces almonds
  • 1 2/3 ounces grated coconut
  • 3 1/2 ounce oats
  • 1 1/2 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 5 medjool dates
  • 2 ounces cashew butter

Method

  • Step 1

    Cut the carrots into small pieces and put into a food processor and blend until finely chopped. Transfer to a bowl.

  • Step 2

    Roughly chop the almond. Add then the oats, coconut, spices, dates, cashew butter and carrots, mix it all together in the blender.

  • Step 3

    Roll each ball, you can add grated coconut to coat them. Place in the fridge for at least 1 hour.
