Chicken Wonton soup Ingredients for wontons 1 cup chicken thigh mince .1 pack wonton pastry.1/3 tsp salt.1/4 tsp black pepper.1 deseeded and very finely chopped green chilli .1 tbs very finely chopped green coriander. 2inches long peeled and very finely shredded carrot .2 to 3 very finely shredded Pak choi leaves . Method Put chicken in a bowl and season with salt and pepper .Add chopped green chillies,coriander ,carrot and Pak choi . Mix properly and open up the wonton pastry for filling . Lay one wonton sheet flat on a clean top and place a little chicken filling in the centre .Add a drop of cold water in all four corners ,join the corners and twist into a mini bundle.Once finished filling the wontons add them to the prepared stock. Ingredients for the stock 1 pound chicken niblets .1 tsp salt.1 tsp soy sauce .1/4 tsp black pepper. Few halved shallots .2 crushed garlic cloves.1/2 inch piece of crushed ginger. Method to make the stock Put chicken niblets in a pot and add I to 1 1/2 litres of water ,shallots ,garlic and ginger .Cook on full heat for half an hour .Then strain through a mesh sieve .Save the stock in a pan and heat it by seasoning with salt and pepper and soy sauce . Gently drop in the prepared wontons and cover to cook on medium high heat for 10 minutes . Then reduce heat for a couple of minutes and taste and adjust seasoning . Garnish with chopped coriander and green chillies . Serving suggestion Serve with Green chilli sauce and fried wonton strips . To make green chilli sauce slice few green chillies.Add 1/2 cup white vinegar and heat together until vinegar reduced to half. To make wonton strips cut up few leftover wonton pastry wrappers into strips and fry until light golden and crisp .
