Vegan Zucchini And Cabbage Turnip Soup
I love green food and I love green soups - so this was a must have for me and my family today vegan zucchini and cabbage turnip soup with freshly grated truffles full loading of vitamins A, C and K, magnesium, potassium, iron, niacin, biotin and folic acids. <br><br> Recipe: <br><br> Stir fry 1 onion and 2 medium sized chopped zucchinis, as well as 1 small chopped cabbage turnip in a little bit of coconut oil until it softens a little. Cover with 1 cup of water and let simmer until super soft. <br><br> Add 1/2 Cup of Soy milk, veggie broth, kosher salt and pepper and process until creamy. <br><br> To garnish and for some extra great taste you may want to slice some fresh truffles on top. Enjoy.
