ingredients

Base

  • 80 grams oat flour (blended oats)
  • 20 grams vanilla vegan protein powder
  • 1/4 teaspoon salt
  • 4 tablespoons maple syrup

Caramel filling

  • 130 grams date paste
  • 40 grams boiling water
  • 50 grams almond butter/ pb butter
  • 15 grams maple syrup
  • 1/3 teaspoon salt
  • 15 grams chopped roasted salted peanuts

Method

  • Step 1

    Combine all measured ingredients for the base, press into 9 silicone muffin forms and put aside.

  • Step 2

    Combine date paste with boiling water into a smooth paste, add nut butter, salt & maple syrup. Eventually mix in chopped peanuts. Add about 1 tbsp of caramel into your muffin cups.

  • Step 3

    Melt chocolate in a water bath together with coconut oil. Pour over each cup and place in the fridge for at least 15 minutes to set.
