This soft Zucchini Bread is studded in chocolate chips, completely vegan and made in just 1 bowl.

ingredients

  • packed zucchini
  • 1/2 cup + 2 tbsp unsweetened apple sauce
  • 1/2 teaspoon vanilla extract
  • 3/4 cup maple syrup
  • 1 1/2 teaspoon cinnamon
  • Pinch salt
  • 3/4 cup baking soda
  • 2 teaspoon baking powder
  • 2 cups white flour
  • Vegan chocolate of choice & crushed pecans or walnuts (as much as you want)

Method

  • Step 1

    Preheat oven to 350°F & line a loaf pan with parchment paper, then spray with oil.

  • Step 2

    Combine zucchini, apple sauce, vanilla, and maple syrup in a large bowl.

  • Step 3

    Add in cinnamon, salt, baking soda, and baking powder. gently fold in flour. lastly, add chocolate chips/nuts (if using).

  • Step 4

    Transfer batter to loaf pan & bake for 55-60 minutes or until a knife inserted in the middle comes out clean. (if bread is looking dark, you can tent it with aluminum foil halfway through).

  • Step 5

    Let cool in loaf pan for 20 minutes then remove & let cool completely before consuming. *pat with a paper towel but no need to squeeze it because you want the extra moisture!
