ingredients

  • 2 cups blueberries
  • 1 tablespoon lemon juice
  • 1 tablespoon tapioca flour (or cornstarch
  • 1 tablespoon sugar

  • 1/4 cup + 2 tablespoons all purpose flour
  • 1/2 teaspoon baking powder
  • 2 tablespoon sugar
  • Pinch salt
  • 2 tablespoons cold vegan butter cubed
  • 2 tablespoons vegan buttermilk

Method

  • Step 1

    preheat oven to 350°F. First make the blueberry base by combing the blueberries, lemon juice, sugar, and tapioca flour together in a bowl.

  • Step 2

    Transfer blueberries to a greased baking dish (I used ~5x5 dish) Next make the topping. in a bowl add the flour, sugar, salt, and baking powder. cut in the butter using a fork, pastry cutter, or your hands (hands is easiest). slowly add in the vegan buttermilk until rough dough forms (you may not need to use the full 2 tbsp)

  • Step 3

    Gently flatten dough and place it across the blueberries how ever you want. bake for 45-55 minutes or until the topping is beginning to brown and a toothpick in the topping comes out clean! *to make vegan buttermilk add a a small dash vinegar or lemon juice to the 2 tbsp plant milk
