ingredients

  • 1 stick softened vegan butter
  • 1/2 cup brown sugar
  • 1/2 teaspoon vanilla extract
  • 1/4 cup white sugar
  • 1 flax egg
  • 1/2 baking soda
  • 1 1/4 cups all purpose flour
  • 1/2- 3/4 cup vegan chocolate chips
  • 1/2 cup chopped pistachios

Method

  • Step 1

    Preheat oven to 350°F & line 1 large or 2 smaller pans with parchment paper.

  • Step 2

    In a large bowl add your vegan butter, sugars, vanilla, and flax egg, beat to combine then add in the flour & baking soda. combine until dough forms and then fold in chocolate chips & pistachios.

  • Step 3

    Roll dough into balls (i made 12) & top with more crushed pistachios. place dough on baking sheet and bake for 12-14 minutes or until edges are just set. let cool before eating!
