- 1/2 cup pumpkin purée
- 1 teaspoon cinnamon
- 1/2 teaspoon pumpkin pie spice
- 1 1/2 teaspoon baking powder
- 2 tablespoons brown sugar
- 1 tablespoon oil
- 1/2 teaspoon vanilla extract
- 1 cup plus 2 tablespoons flour
- 1 cup plant milk + dash vinegar (vegan buttermilk)
Method
Step 1
Heat waffle maker then in a bowl combine the plant milk plus vinegar and let sit for a minute. whisk in the pumpkin, brown sugar, oil, and vanilla extract. next add the flour, baking powder, and spices. let batter rest for 5 minutes before making the waffles.
Step 2
Pour batter onto waffle iron and let bake for 5-6 minutes. repeat with remaining batter.
Step 3
Top with pecans, maple syrup, vegan butter, and a little coconut whipped cream!
