Roasted Cauliflower Beet Lentil Bowl

ingredients

  • 1 bag cauliflower florets, trimmed
  • 1 package precooked lentils
  • 6 small beets, cut in quarters
  • Juice of 1 lemon
  • 1 tablespoon olive oil

Method

  • Step 1

    Preheat oven to 375f. Place trimmed cauliflower onto a baking sheet, coat with spray olive oil, salt and pepper, toss and roast for 15 minutes or until cauliflower begins to char a tad on the edges.

  • Step 2

    While that is cooking, add lentils, beets, and parsley to a bowl. Add cauliflower when finished. Drizzle with lemon juice and olive oil. Toss. Add any extra salt and pepper to your liking.
