ingredients
- 2 cans unsalted sweet corn kernels
- 1/4 cup diced white onion
- 2 tablespoons unsalted butter
- 1/2 cup half and half
- 1 14 ounce jar EPIC Homestyle Savory Chicken Bone Broth
- 1/3 cup grated parmesan cheese
- salt and pepper to taste
Method
Step 1
In a medium saucepan, melt the butter on medium heat.
Step 2
Once melted, add diced white onion and sauté until slightly cooked and translucent.
Step 3
While the onions are simmering, drain and rinse the corn.
Step 4
Add corn, half and half, and broth to the pot. Bring to a simmer.
Step 5
Once simmering, scoop out 1 1/2 cup of the corn mixture, blend in a food processor or high speed blender until smooth and creamy.
Step 6
Add the pureed corn back to the pot, stir to combine. Season with salt and pepper.
Step 7
Remove from heat, stir in grated parmesan cheese until melted and well combined. The mixture will become thicker. Serve immediately.
