- 1 medium to large baked sweet potato, still warm, cut in half lengthwise
- Olive oil, for drizzling
- Kosher salt, to taste
- 2 tablespoons store-bought or homemade BBQ sauce
- 1/4 cup thinly sliced red onions
- 1 tablespoon thinly sliced jalapeños (optional)
- 1/2 cup shredded rotisserie chicken
- 1/2 cup fresh mozzarella, torn into small chunks
- Fresh cilantro, chopped, for garnish

Step 1
Preheat the oven to 450°F.
Step 2
Place the sweet potato halves skin-side down on a parchment-lined baking sheet. Drizzle with olive oil, cover with another piece of parchment, and smash each potato half to about ¼-⅓ inch thickness using a heavy skillet. Remove the parchment, drizzle again with olive oil, and sprinkle with salt. Bake for 10-15 minutes until the edges begin to crisp.
Step 3
Top the smashed sweet potatoes with BBQ sauce, red onions, jalapeños (if using), shredded chicken, and mozzarella. Return to the oven for another 10-15 minutes until the cheese is melted and bubbly.
