  • 1 medium to large baked sweet potato, still warm, cut in half lengthwise
  • Olive oil, for drizzling
  • Kosher salt, to taste
  • 2 tablespoons store-bought or homemade BBQ sauce
  • 1/4 cup thinly sliced red onions
  • 1 tablespoon thinly sliced jalapeños (optional)
  • 1/2 cup shredded rotisserie chicken
  • 1/2 cup fresh mozzarella, torn into small chunks
  • Fresh cilantro, chopped, for garnish

Method

  • Step 1

    Preheat the oven to 450°F.

    Place the sweet potato halves skin-side down on a parchment-lined baking sheet. Drizzle with olive oil, cover with another piece of parchment, and smash each potato half to about ¼-⅓ inch thickness using a heavy skillet. Remove the parchment, drizzle again with olive oil, and sprinkle with salt. Bake for 10-15 minutes until the edges begin to crisp.

    Top the smashed sweet potatoes with BBQ sauce, red onions, jalapeños (if using), shredded chicken, and mozzarella. Return to the oven for another 10-15 minutes until the cheese is melted and bubbly.
