  • 3 tablespoons unsalted butter, melted
  • 1 garlic clove, minced
  • 1 cup cottage cheese (regular or lactose-free; I like @good_culture)
  • 3 large eggs
  • 4 ounces mozzarella cheese, shredded (plus 2 oounces more for topping)
  • 1 1/2 teaspoons kosher salt
  • 1 cup plus 1 tablespoon tapioca flour/starch
  • 1 cup pizza sauce (store-bought or homemade), divided
  • 2 - 3 ounces pepperoni (optional, or use your favorite topping like candied jalapeños)

Method

  • Step 1

    Preheat the oven to 400°F.

  • Step 2

    In a small bowl, combine the melted butter and garlic. Add 1 tablespoon of the garlic butter to a blender. Use the rest to generously grease each well of a mini or regular muffin tin (avoid using a jumbo tin—these won’t set well).

  • Step 3

    To the blender, add cottage cheese, eggs, 4 oz (about 1 cup) mozzarella, salt, and tapioca flour. Carefully pour the tapioca flour close to the surface to avoid a powder cloud. Blend on high for 1 minute, or until very smooth. (Use a food processor if needed.)

  • Step 4

    Pour the batter into muffin wells, filling each about halfway. Spoon 1 teaspoon of pizza sauce into the center of each, then top with a few slices of pepperoni and a sprinkle of the remaining mozzarella (about 1 tablespoon per bite).

  • Step 5

    Bake for 20–30 minutes, until puffed and deep golden brown. Avoid underbaking, or the bites may collapse as they cool.

  • Step 6

    Warm remaining pizza sauce for dipping and serve alongside the bites.
