A little weekend present from me to you. We haven't purchased chocolate in weeks since I came across a simple way to throw it together using goods we already had on hand at home - and we are obsessed. I chop the bar into chunks to keep in a jar in the pantry, and have baked these in cookies - as well as chopped them into shavings and swirled through homemade ice cream. After several tests I feel like I can finally bring the recipe to you in print here! Happy chocolate making, my fellow willy wonkas

Recipe

INGREDIENTS
1 cup cocoa butter
1/2 cup coconut sugar
1 teaspoon vanilla extract
1 cup raw cacao powder

DIRECTIONS
Combine the cacao butter and coconut sugar in a small, heat proof glass bowl and place over a pot of simmering water on the stove (double boiler). Stir until the butter is melted, then remove from the heat. Add the vanilla, stir well. Add the cacao powder and whisk until silky smooth.

Transfer to a parchment lined 9x5 baking pan and let sit on the counter for a few hours to harden. Slice into chunks and store in an airtight jar in a cool cupboard.
